You may have noticed that I missed yesterday (you noticed, right?!). Well that’s because I’m just keeping on feeding like normal until my starter really gets going.
One nice thing about getting a starter more established is how easy it is to take care of. When I feed my starter, I pour out about half (or more) of the old starter, add in some water, and add flour until the starter looks basically right. No more weighing, no more accuracy in measurements. Just a little observation and feel.

As the week goes on, I’m hoping to have a starter that’s ready to use as a primary rising agent in a bread and to have some nice snacks to make with my discard. Until then, good luck with your bread!
